Sodium dehydroacetate also known as Dehydroacetic acid sodium salt, is an antibacterial agent with high safety, wide antibacterial range, and strong antibacterial ability. It is less affected by the acidity and alkalinity of food, and can maintain high antibacterial efficacy under acidic or slightly alkaline conditions. Its antibacterial ability is superior to sodium benzoate, potassium sorbate, calcium propionate, etc. It is an ideal food preservative and fresh-keeping agent.
