Fumaric acid is a carboxylic acid derived from butene and is a colorless flammable crystal.It is the simplest unsaturated dicarboxylic acid.
It was first found in the cordyceps plant Yanhusuo. It is also found in various mushrooms and fresh beef. Fumaric acid and maleic acid are geometric isomers of each other. Fumaric acid is converted to maleic acid when heated to 250-300 ºC. Fumaric acid also produces mono- and dibasic esters or amides, but not monobasic chlorides. It reacts with phosphorus pentachloride or thionyl chloride to form dibasic chlorides.
Applications of Food Additive Acidulant Fumaric Acid:

2. Fumaric acid is used as an antioxidant, mordant and buffering agent.
3. It is used to lower pH.
4. its use in rye bread and yeast to make them more acidic.
5. It combines with leavening agents to produce a slow fermentation.
