What is Sodium Gluconate?

Sodium Gluconate is an organic compound. It is the sodium salt of D-glucose hydrate.Sodium Gluconate is colorless crystal or white crystalline powder, soluble in water. Its nature is stable and not easy to be decomposed by heat. A common method to prepare D-gluconic acid sodium is to dissolve D-glucose in water, add sodium hydroxide, after reaction and crystallization.

Uses:

• Food Industry: Sodium Gluconate is used as a food additive, mainly as a chelating agent and pH regulator. It can prevent metal ions from causing discoloration and spoilage in food.
